Favorite Chuck Roast Recipe:


  • 1 (2-3) lb Chuck Roast, cut into several large pieces if you like for easier handling and searing
  • 1 onion, chopped
  • 6 cloves garlic, chopped
  • 4-6 carrots, cut into chunks
  • 6-8 small potatoes, cut into chunks
  • 2 cups beef broth
  • 3 Tbsp oil (one with a high smoke point like Grapeseed oil is good)
  • Salt and Pepper

Instant Pot Instructions:

  • Salt and pepper roast generously on both sides (just FYI, I did this with the roasts still frozen and it
    still turned out awesome!)
  • Heat oil in Instant Pot on “sauté” setting
  • Sear meat 3-5 min on each side, then remove from pot
  • With Sauté setting still on, add beef broth and scrape the bottom (deglaze)
  • Add meat back in, and add onions and garlic on top
  • Secure lid on instant pot, set on Manual for 60 minutes
  • After cook time is over, allow natural pressure release for 10-15 minutes
  • Remove meat and shred (leave liquid in pot)
  • Now add vegetables to the liquid in the instant pot, and set manual cook time to 5 minutes
  • Once the vegetables are done, add a bag of microwaved peas and add shredded meat back in, and you are

Stove Top/Crock Pot Instructions:

  • Heat oil in pan on high
  • Sear meat 5 min on each side
  • Remove meat from the pan, but leave the stove on
  • Add beef broth to the pan and scrape the bottom (deglaze)
  • Next add the broth to the crock pot, and layer meat on the bottom, then add onions, garlic, potatoes,
    carrots, and mushrooms, in that order
  • Set on high for 3-4 hours. To check and see if the meat is done, take out a piece and try to shred it
    with a fork. It should fall apart easily!
