Reverse Seared Porterhouse Steaks Recipe:

Combine the following ingredients to make dry rub:

(You will have more dry rub than is needed for the recipe)

  • 1/3 Cup Coarse Grain Salt
  • 1 Tbsp Freshly Ground Black Pepper
  • 2 Tbsp Smoked Paprika
  • 2 Tbsp Garlic Powder
  • 2 Tbsp Brown Sugar
  • 1 tsp Cayenne Pepper (optional)

Dry Brining instructions:

  • Season boy sides of each steak generously with dry rub
  • Place on a rack on a baking sheet and place uncovered in the refrigerator for 24-48 hours. This will allow the seasoning to fully penetrate the steak.
  • Remove steaks from the refrigerator and allow them to reach room temperature.

Cooking instructions:

  • Preheat oven to 250 degree then cook approximately 30 minutes or when steaks reach an internal temperature of 130F
  • Let rest 7-8 minutes, then rub with olive oil.
  • Sear on grill or in skillet 2-3 minutes per side.
  • Rest 7-8 minutes before carving
